Set of operations (production, stocking, transportation and commercialisation) that fresh or frozen products have to undergo in order to reach their destination in good conditions and without irreparable qualitative damages.
The cold chain requires and guarantees to keep the low level of temperature along all the phases of the distributive process, from the transportation to the stocking, as well as the allocation in the shops or places where the products are supposed to be consumed. The temperature under which these type of goods should be kept should not go over 20 Celsius degrees.
The products that belong to this chain include all the goods that have to be kept frozen under a specific temperature (zootechnical and agricultural products).
